UTF 8 or 16 or ASCII fur help files from a Mac

Sorry, that question was asked a lot but I can’t make it right in my head.

I dev on a Mac.
When I create text files to add as help and rules files for Vassal Modules, I can see them with all the accents I need.
But that’s when I do that on a mac, and open on a mac and play on a mac.
I don’t have a windows to test.
But other players complain about the format of the text files.

So, which format MUST I use when I save text files so when I import them to Vassal Module as help files, my french accents and special characters will be readable by everyone with the same version of my module and vassal ?

Is it UTF8, UTF16, with BOM, without BOM, LE, not LE ? ASCII ???
